DIFFERENT NOW: MEMÒRIES D’ESPANYA VEGETALS 2025

If you make a horizontal cut to a piece of Asparagus and look at it molecularly, you will see a mirror. The leaves will show the beginning of germination, illustrating exactly what is on the outside of the spear. It is not often the section is so apparent, staring back at you down its barrel. This relationship between inside, outside, part, whole is essential to understanding any system.

The DIFFERENT NOW dish is only made of Asparagus, lemon, oil, water, and salt/ pepper. This dissection of a material, Asparagus, and working with its specific properties, is no different than working with any material as a bricolour.
